about

HI! My name is Kate and I'm extremely passionate about food, obviously! Currently I'm studying at Le Cordon Bleu, doing an advanced diploma of hospitality, specialising in Patisserie, but really I love all sorts of cooking. At the moment though, I'm doing my 6 month placement at a little patisserie. This is my way of documenting my progress as a cook and patissiere and slowly building a portfolio to further my culinary interest :)

Whisk Patisserie - A lot to be desired

Today, after having a delicious ice coffee at Gingers coffee studio, me and my mother stumbled into "Whisk patisserie" on Goodwood road, looking for a bite to eat as a late lunch. I would like to take this opportunity to wonder how they have thus far succeeded as a business. Word on the foodie front has informed me of the bad reputation of the owner as a rather rude person, but we decided to give this place a go none the less. despite an amazingly versatile range of quality products, I am left shocked at the ability of these guys to run a place such as this with absolutely zero customer service skills. Friendliness and the ability to provide great customer service is the FUNDAMENTAL key to running a business in my eyes (obviously paired with quality products, etc). The pastry I bought for lunch was a Thai spiced chicken strudel, and don't get me wrong it was quite nice. We had dropped in quite close to closing time and I did not expect any more than for them to chuck this in a bag, to pay and then leave. the staff ignored me for a while before just being plain rude during the transaction. hopefully this place goes out of business soon, because people like that do not deserve the luxury of such a space or to be in such a exciting industry :)

Wednesday, 15 August 2012

I have been thinking that to really get the most out of my 6 months off tafe, as well as doing my placement im going to cook as much new cuisine as I possibly can, as well as the basics I love. trying to take photos of all my cooking is something I always forget to do, but this is going to push me to become a better photographer of food, fingers crossed. so I will include some recent cooking exploits photos :)
Firstly, tuscan roast pork belly, worth the three hours it took!

Lemon meringue tarts, summer
Recently for my friends 20th, I invited some friends for a 5 course meal at my place. I have always wanted to serve a degustation menu, and this was probably my first attempt at anything close! the menu consisted of home made ciabatta with a rocket, prosciutto and feta salad, handmade gnocchi in sage butter on a roast pumpkin mash, veal scallopini with eggplant, mozzarella and a tomato mushroom sauce, chocolate tarts with honeycomb and caramelised banana, and a lemon, mint and vodka granita to finish. A challenging days work but i loved every minute and although not everything turned out how I planned, it was a great way to celebrate my friends 20th :)
